Phillip's Spanish Omelet
Ingredients
4 small red potatoes, thinly sliced
1/2 medium onion, chopped
4 Tablespoons olive oil
2 Tablespoons white wine
5 eggs
1/4 cup milk
1/4 teaspoon baking soda
1 fresh tomato sliced
3/4 cup of grated cheese-Phillip prefers a mixture of Emmenthaller & Manchego
Preheat the oven to 425°F. Heat the oil in a large frying pan. I use a
cast iron frying pan and bake the omelet in the same pan. Gently fry
the sliced potatoes until almost soft, stir constantly so that they don't
burn on the bottom of the pan. Add the onion and white wine and continue
frying until all the vegetables are soft. Season with salt and pepper
to taste
Beat the eggs and milk together in a bowl. Add a ¼ teaspoon of baking
soda and season with salt and pepper. Add cheese, potatoes, and other
ingredients and mix well.
Pour the eggs and veggies into an oiled baking dish. Top with sliced
tomatoes. Bake omelet for 20 minutes or until it is slightly brown on top.
